There'smore than one way to cook apizza, but not all of them are any good. At Regents Pizzeria, we use a big stone-deck oven. It's theonly way to get a perfectly crispedcrust. The only reason the chain-pizzerias don't usestone-deck ovensis because they require a skilled pizza cook to use. Since we haveskilled pizza cooks,and stone-deck ovens, we have betterpizzas.
