Chef Stephen Carson became the 3rd owner of a not so successful, 1,100 square foot, 32 seat restaurant called Regents Pizzeria in 2005. By this time, he had nearly 20 years of experience as executive chef of multi-unit restaurant concepts and decided to strike out on his own. While the menu was like today’s, it lacked the authenticity, quality and flavor profile Stephen envisioned. He worked diligently all hours of the day, every day of the week without a salary for nearly 2 years to set the standard for this incredible restaurant experience. Stephen left us prematurely in 2011 after a two-year battle with cancer. His legacy lives on in the bold flavors, authentic menu items, personal service, culture, and sometimes irreverent attitude that we enjoy today in our beautiful 4,100 square foot 150 seat restaurant and craft beer bar.
